French Fridays with Dorie: Canèlles

Very excited to kick off my first post for French Fridays.  When I pre-purchased Baking Chez Moi and perused the free preview recipes I was instantly drawn to the canèlles.  Batter that needs to rest and creates a mixture of textures and flavors yet involves simple ingredients is about as French as you can get.

The recipe requires a special mold that’s traditionally made out of copper and requires the use of beeswax.  I went for the modern silicone version which was pretty cheap and easy to order online.

I absolutely love that you make the batter ahead of time for this recipe.  So often baking requires perfect timing and this gives  some wiggle room.

The only downside to making these is the appearance.  The dark brown/black exterior of the unmolded canelles would make you think that they are burnt instead of a carmel crunchy exterior to a chewy and moist sweet treat.  Once I assured my husband that the black exterior was normal he taste tested and loved it.

Overall I think these are quite lovely and a perfect compliment to some very strong tea or coffee.

Fall in Arizona

Arizona Fall brings many of the things you would expect: crisp apples, changing leaves and cooler weather. It can also be a great time to get outside and celebrate the end of Summer. We spent a joyous day in Sedona with weather still hot enough to enjoy Slide Rock State Park and the icy cold water.

On our way home we picked up a variety of local apples at a road side stand. Crisp fall apples are the perfect excuse for a pie and since we had such a variety I thought I would try something a little different. I’ve been testing out some recipes from Sharing the Table with some success and the apple pie was no exception. Rather than post the recipe I encourage you to purchase the book. Everything I’ve tried so far is fabulous. If you want to do some testing before your purchase you can head over to cookstr.com for a few free recipes (I recommend the chocolate chip cookies!).
